I was getting this error message after doing an update of Docker Desktop.
starting engine: engine linux/hyperv failed to start: creating Hyper-V VM: Post http://ipc/hyperv/create: context deadline exceeded
I suspected (from many bad experience) its due to updates, and after doing a full windows update, it started working again.
