lots of onions 4 ideally red
garlic and ginger. 3 blocks of pre cut and crushed
pepper
Beans to be soaked for at least 5 hours, cook for an hour,
put in a small amount of bi carbonate of soda when the beans are nearly done and quite soft.
to make the sauce to mix into the beans
dice onions, garlic and ginger – all separately
fry the onions till it browns, do not burn it
add salt
add scotch bonnet pepper
cook down till Browing
add diced tomatoes (use food processor to dice the tomatoes) cook down
add salted tilapia for flavour
add paprika some smoked sea salt if available
get some prawns (frozen is fine, no need to defrost the prawns) and cut into pieces and mix into the sauce
after about 10 mins of cooking the sauce down, pour in the beans
if you have some palm oil pour in a generous amount
food should be ready to eat after about 10 mins
